Oatmeal Cookies


1/2 cup butter, softened
1/2 cup shortening, butter flavored
1 1/3 cup light brown sugar, packed
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
3 cups rolled oats (old fashioned)
1 cup raisins
1 cup coconut
1/2 cup chocolate chips, minis

Preheat oven to 350°F

In a large bowl, cream together the butter, brown sugar, egg and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter/sugar mixture. Stir in the oats, raisins, coconut and chocolate chips.

Bake them for 12 minutes or so.
