Homemade Ice Cream

John and I have made ice cream two weeks in a row. Last week we made peach ice cream, and strawberry this week. I prefer the strawberry, but it may be my improved technique :-D

  1. Vanilla Ice Cream: Philadelphia Style
    1 quart half and half
    1 tbsp vanilla
    ¾ cup sugar
    1/8 tsp salt
    If adding fruit use about 1 cup fruit per quart of icecream. Pre-sweeten the fruit and puree about ½ of it.

    I used a little more than a pound for a double recipe.

    Combine and put into an ice maker. Makes about 1 ½ quarts.

    Apparently making a smaller batch lets the machine work more air into it and makes a much softer batch.
