One of my favorite chocolate cake recipes. Super-simple, nice and light, not too rich but still sticky-moist.. delicious. I only wish I could've showed you the inside.

  1. Super-Simple Chocolate Cake

    1 1/2 cups flour
    3 1/2 tbsp. cocoa powder
    1 tsp. baking soda
    1/2 tsp. salt
    1 cup sugar
    1/3 cup vegetable oil
    1 tbsp. white vinegar
    1 tsp. vanilla
    1 cup cold water

    (that's right; no eggs)

    Prepare an 8x8 pan with shortening, and line the bottom of the pan with parchment or wax paper (don't skip the paper part.. I learned this the hard way).

    Sift together the flour, cocoa, baking soda and salt. Wisk in the sugar.

    Make three wells in the dry ingredients.* Pour the oil into one well, the vanilla in another, and the vinegar in another. Pour the cold water over all, then wish thoroughly until well mixed (batter will be thin and only light brown).

    Pour into prepared pan and bake at 325 degrees for 35-40 minutes, or until toothpick comes out clean (start checking at 35 minutes). Let cool in pan for 10 minutes before removing. The cake may smell burnt, but it's not; it's important to let the cake rest overnight to let the flavor and moisture develop.

    *I am not normally into such voodoo, but I've tried it without doing the three wells, and it actually doesn't work unless you do it. Who knows why.

    **This recipe makes excellent, moist cupcakes (about 14-15 of them), but does NOT double well. It's so easy to throw together that this is usually not a problem.

  2. Sounds very interesting...no eggs and vinegar? This may have to be my next chocolate attempt. We just ate the last cupcake from last sunday and it was still moist and yummy!

  3. It really is yummy.. The batter itself isn't very dark, but the cake bakes into a deep dark brown.. The taste is similar (to me) to chocolate snack cakes like Ring Dings and stuff like that (at least I think so.. haven't had those since I was like 8). :-)
