Roasted Tomato Sauce on Penne Pasta




The tomatoes from the fruit stand were so good I had to buy more today, so I made my roasted tomato sauce and penne pasta. Seven was stalking something in the background :-).

  1. 2 lbs tomatoes (seeded and chopped)
    2 tbsp olive oil
    1 small onion, chopped
    1 garlic clove, minced
    1 tsp salt
    1 tsp sugar
    1/2 tsp dried basil
    1/2 tsp dried oregano
    1/4 tsp pepper
    Hot Cooked pasta ~1/2 lb
    Shredded parmesan cheese (toss in after cooked)
    Bake in 9 x 13 pan uncovered at 350* for 50-60. stirring twice. Toss with pasta; sprinkle with parmesan. Sometimes I add chicken or Italian Sausage.
