Sourdough Pizza with feta and parmesan




These are a few days late, it's been a busy week. I made sourdough pizza dough and John made the pizza: mozzarella, feta and parmesan cheeses. (also, the plate was $ 0.50 at a Kroger after Easter sale!)

  1. Sourdough Pizza Dough
    1 1/2 cups sourdough starter, room temperature*
    1 tablespoon olive oil
    1 teaspoon coarse salt
    1 1/2 cups bread flour

    1. Preheat oven to 500°F.
    2. Mix starter, 1 tbsp olive oil, salt, and flour together in a mixing bowl until it blends and forms a ball (add more or less flour to adjust consistency; if you get it too dry just add a little more starter).
    3. Allow dough to rest for about 30 minutes (don't look for it to rise, just to get the dough where it is easier to roll).
    4. Roll out mixture on parchment paper or a lightly floured surface until it fits the size of your pan, turning the dough as you roll (if you want a more even circle).
    5. Top as desired and cook until browned and cheese is melted.

  2. ooh, how is it with the feta? I never thought to put feta on a non-white pizza. Yum!

  3. he stuffed the crust with the feta, asiago, and parmesan, and put a little of that everywhere under the sauce. He also put basil, garlic and olive oil over all of the crust.

    Delicious! It just adds a bit more depth to the flavor.
