buttermilk pancakes with boozy fruit syrup and maple syrup


Buttermilk pancakes, cooked perfectly on a cast iron griddle and topped with boozy fruit syrup, and real maple syrup (from my cousin in PA)

Boozy Fruit Syrup:

chop 1 cup boozy fruit in small food processor
add 1/4 cup water with a tbsp of cornstarch
heat until thickens

Buttermilk Pancakes

1 cup flour
1 tablespoon sugar
1 tsp baking powder
1/4 teaspoon soda
1/4 teaspoon salt
1 egg slightly beaten
1 cup buttermilk (or pour 1 tbsp lemon juice in a cup measure and fill to the 1 cup line with milk)

  1. I meant to take pics of the boozy fruit and do a recipe post, but I forgot to take pics AND I accidentally gave away my own jar of it. Boo. :)

    Boozy Fruit

    Any mixture of dried fruit - about 1 3/4 cups (I used cranberries, raisins, apricots, apples, papaya, pineapple, figs, prunes, peaches, pears.. and maybe others I'm forgetting

    2/3 cup vanilla vodka
    1/3 cup each amaretto liqueur, brandy, Southern Comfort
    1 tsp. grated ginger
    1 tbsp. brown sugar

    Layer your fruit in a large glass jar with lid. Combine the liquors, ginger, and brown sugar in a large measuring cup. Pour over the fruit and seal tightly. Check the fruit every day and top off with any of the four liquors (or any excess liquor mixture that didn't fit in the jar). Fruit is ready to use in about 2 weeks.
