Cheese, glorious cheese
Cheese Crackers (basically homemade CheezIts)
1/2 cup softened butter
4 cups shredded sharp cheddar cheese, room temperature
2 cups flour
1/2 tsp. salt
Note: If your cheese is cold, it'll solidify your butter and will take longer to incorporate. I grated mine cold from a block, then spread it on a plate in 3 batches and zapped them for about 11 seconds per batch. Worked like a charm. Carry on.
In a large bowl, cream together the butter and cheese until mostly combined. Combine the flour and salt, and add to cheese mixture until combined.
Roll out to 1/4 inch thickness on a floured surface; cut into desired shapes and transfer to an ungreased baking sheet.
Bake at 400 degrees for 10-12 minutes. Remove to wire racks to cool completely. They'll crisp up as they cool.
