Dark Chocolate Cherry Frozen Yogurt
My favorite one so far. The cherries are nice and tart and this may actually rival the gelatto I had in Florence, with the added bonus of not having milk in it!
Coconut Pinkcherry Yogurt Adapted from The Perfect Scoop, David Lebovitz Makes about 1 quart 3 cups strained yogurt* or Greek-style yogurt 3/4 cup sugar 1/2 teaspoon almond extract 3/4 cup cherries, pits removed and roughly chopped 1 cup unsweetened coconut milk ½ cup dark chocolate slivers (see below)**
Mix together the yogurt, sugar, almond extract, cherries and coconut milk. Stir until the sugar is completely dissolved. Refrigerate 1 hour.
Freeze in your ice cream maker according to the manufacturer’s instructions.
Add chocolate after you take the Yogurt out of the machine.
* To make 1 cup (240g) of strained yogurt, line a mesh strainer with a few layers of cheese cloth, then scrape 16 ounces or 2 cups (480g) of plain whole-milk yogurt into the cheesecloth. Gather the ends and fold them over the yogurt, then refrigerate for at least 6 hours. (I was too impatient so I squeezed it in the cheese cloth. Seemed to work well)
**I added these to Smittenkitchen’s recipe: I took 62% dark chocolate chips and melted them in a double boiler with a splash of the coconut milk. Then I spread this onto a sheet of parchment paper and froze the chocolate until it was hard enough to break into small chunks.
Oh my GOSH, I thought I'd seen every recipe on her site - how did I miss this one?????
Now my dilemma deepends.. Do I give in and buy an ice cream machine this weekend ($25)? or do I wait a few weeks and buy the attachment for my Kitchenaid ($75)? Damn you for posting this!!!!!! lol
OH MY GOD this stuff is the most fantastic, mouth tingling, almost pornographically yummy stuff ever. I think it may be my favorite dessert ever. At least for this month!
I am also contemplating the $75 attachment...but it only makes a little icecream, this one will make 4 quarts!
Yeah.. I just hate to have a uni-tasker sitting around cluttering things up, and would rather have the Kitchenaid attachment.. my mixer is a 5-quart, so I wonder if the ice cream attachment would be that size?
Eh.. I can't wait.. I might just buy the machine. :) YAY!

just buy a cheap one, ice cream is not that complicated
