Mini Sourdough Pretzels
Mini Sourdough Pretzels. I have been wanting to make pretzels for a while but just got around to doing some sourdough ones :). I love how cute the little dough babies are!
2/3 cup sourdough starter 1 cup warm water 3 cups bread flour 1 cup whole wheat flour 2 T sugar (I’m not sure if this should have been IN the pretzels, but I put it in) 1 T olive oil
Water: ¼ cup baking soda (could probably have used less, it foamed a LOT) 2T sugar
Topping: 1 large egg and 1 Tbsp (beaten) Coarse or pretzel salt (I used Sea Salt)
Mix starter, water, oil, flours and salt. Adjust flour until you have a nice ball of dough (keep it soft though).
Knead until smooth. Place the dough in an oiled bowl, cover and set aside to rise in a warm place (at least an hour or until doubled).
Punch dough down, form into a big rectangle and begin cutting off bits to work with as individual pretzels. Roll the dough into strips and Knot. Cover and let rise for about 15 minutes (by the time you finish them the first ones should be ready)
Fill a large pot with 2 inches of water and bring to boil. Add baking soda and sugar. Reduce to simmer and then add pretzels 4-5 at a time. Boil for one minute on each side. Remove from the water and let drain on a rack.
Place them on a baking sheet lined with parchment paper and brush them with the egg mixture and sprinkle with coarse salt (I also made some with cinnamon sugar)

Bake for 12-13 minutes at 450*.

1/2 tsp salt if desired

do not use any metal to stir it.
